    Heat the oven to 160Β°C and line a baking tray with baking paper. Draw a 14cm circle on the underside of the paper as a shaping guide

    Roughly chop 20g almonds. Spread them with 15g pumpkin seeds inside the marked circle and toast for 5-6 minutes until fragrant, then tip them into a bowl; reserve a small spoonful for the top

    Finely chop 45g dried figs and 30g dried apricots, setting half the figs aside for the binder

    Lightly crush ΒΌ tsp fennel seeds, then mix them with 40g defatted soy flour, 10g hemp seed, Β½ tsp cinnamon, ΒΌ tsp ground ginger, ΒΌ tsp ground coriander, 1 pinch black pepper and 1 pinch salt, breaking up every lump of soy flour

    Finely zest Β½ orange, then squeeze its juice into a small saucepan. Add 20g maple syrup, 20ml water and the reserved figs; simmer for 3-4 minutes, then mash firmly with a fork into a rough, sticky orange-fig paste

    Immediately fold the hot paste and orange zest through the spiced flour, then work in the fruit and crunch. The mixture should be extremely stiff and sticky rather than pourable. With damp hands, press it firmly into the marked 14cm circle, about 1.5cm thick, and press the reserved nuts and seeds over the top

    Bake for 18-22 minutes until the surface is dry and the edge feels set but the centre still yields slightly. Cover with fresh baking paper while warm, place a second tray on top and press gently for 10 minutes to make the characteristic compact, chewy slice

Nutrients food alone won't reliably cover

These three are commonly under-consumed across all diets, not just plant-based ones - the difference is mainly B12, which has no whole plant food source at all.

  • Vitamin B12: is absent from whole plant foods entirely - the number above only reflects fortified ingredients (nutritional yeast, fortified soy milk). A reliable B12 supplement or fortified source is the standard recommendation for a fully plant-based diet, regardless of what any single day's total shows.
  • Omega-3 (EPA/DHA): most people fall short here regardless of diet - the typical omnivore diet doesn't include much oily fish either. This app only tracks ALA, the plant form (flax, walnuts, hemp, chia). The body converts some ALA to EPA and very little to DHA - the forms most directly used by the brain, eyes and heart - and that conversion is inefficient. An algae-oil supplement is the usual plant-based way to get EPA/DHA directly; it won't show up as an ingredient in any recipe here.
  • Vitamin D: deficiency is widespread across all diets, not just plant-based ones - it's mostly absent from whole plant foods here, and even the fortified soy milk and yogurt tracked don't cover the full target from food alone. Reasonable sun exposure or a D2/D3 supplement is the standard recommendation.
