  1. 2
Rinse 50g dry basmati rice in several changes of cold water until the water is nearly clear, then drain well
    πŸ– 2 min
  2. 3
Deseed ΒΌ scotch bonnet chilli for gentler heat, or leave the seeds in for a hotter jollof
    πŸ– 1 min
  3. 4
Roughly chop Β½ red bell pepper. Blend 75g roughly chopped tomato, bell pepper, ΒΌ white onion, chilli, 1 clove garlic and 3g ginger to a smooth purΓ©e

  4. 5
Heat 6ml olive oil in a wide pot, fry the tomato-pepper purΓ©e with Β½ tbsp tomato paste over medium-high heat for 15-20 minutes, stirring often, until it reduces, darkens and the oil starts to separate at the edges - this frying-down step is what gives jollof its depth, don't rush it
    πŸ– 5 minπŸ’€ 15 min unattended
  5. 6
Stir in Β½ tsp House Curry Powder Blend and ΒΌ tsp dried thyme, cook 1 minute. Add basmati rice, 95ml House Veggie Broth and kidney beans, stir once, bring to a boil
    πŸ– 3 min
  6. 7
Reduce to the lowest heat, cover tightly and cook 25-30 minutes without lifting the lid, until basmati rice is tender and the liquid is fully absorbed
    πŸ– 2 minπŸ’€ 28 min unattended
  7. 8
Slice Β½ ripe plantain diagonally. Meanwhile, fry plantain in 4ml olive oil over medium heat 2-3 minutes per side until caramelised and golden

Nutrients food alone won't reliably cover

These three are commonly under-consumed across all diets, not just plant-based ones - the difference is mainly B12, which has no whole plant food source at all.

  • Vitamin B12: is absent from whole plant foods entirely - the number above only reflects fortified ingredients (nutritional yeast, fortified soy milk). A reliable B12 supplement or fortified source is the standard recommendation for a fully plant-based diet, regardless of what any single day's total shows.
  • Omega-3 (EPA/DHA): most people fall short here regardless of diet - the typical omnivore diet doesn't include much oily fish either. This app only tracks ALA, the plant form (flax, walnuts, hemp, chia). The body converts some ALA to EPA and very little to DHA - the forms most directly used by the brain, eyes and heart - and that conversion is inefficient. An algae-oil supplement is the usual plant-based way to get EPA/DHA directly; it won't show up as an ingredient in any recipe here.
  • Vitamin D: deficiency is widespread across all diets, not just plant-based ones - it's mostly absent from whole plant foods here, and even the fortified soy milk and yogurt tracked don't cover the full target from food alone. Reasonable sun exposure or a D2/D3 supplement is the standard recommendation.

Not medical advice - if you're eating fully plant-based long-term, it's worth a conversation with a GP or dietitian, and a blood test is the reliable way to check where you actually stand.
