Method

Do the night before

  1. 1
Defrost 60g cooked edamame overnight in the fridge if using frozen

These steps sit outside the cooking-day clock.

24 min hands-on 34 min altogether
  1. 2
Cover 48g dry rice noodles with just-boiled water and leave according to the packet until just tender. Drain, rinse briefly and divide into a serving bowl.
    πŸ– 2 minπŸ’€ 5 min unattended
  2. 3
Pat 135g firm tofu dry, tear into rough bite-sized pieces and brown in half the 4ml olive oil for 5-6 minutes until several faces are crisp. Move to a plate
    πŸ– 6 min
  3. 4
Blend or pound 33g red onion, 1 clove garlic, 7g ginger, 9g finely grated or paste lemongrass, 1 tsp House Curry Powder Blend and ΒΌ fresh chilli with the remaining oil into a rough paste. Fry it in the same pan for 4-5 minutes until deeply fragrant and no longer raw
    πŸ– 7 min
  4. 5
Pour in 75ml full-fat, tinned coconut milk, 260ml House Veggie Broth and 7ml soy sauce. Add 75g mushrooms, bring to a steady simmer and cook uncovered for 8 minutes so the broth takes on their savoury depth
    πŸ– 3 minπŸ’€ 5 min unattended
  5. 6
Return the crisp tofu with edamame. Separate the 90g pak choi stems from the leaves; simmer the stems for 2 minutes, then add the leaves for 1 minute so both remain vivid and the stems keep their snap
    πŸ– 4 min
  6. 7
Squeeze 16ml lime juice into the broth and taste for salt, sourness and heat. Ladle over the noodles, keeping the tofu and pak choi visible, then pile on 75g beansprouts. Store broth, noodles and fresh finish separately if making ahead
    πŸ– 2 min

Nutrients food alone won't reliably cover

These three are commonly under-consumed across all diets, not just plant-based ones - the difference is mainly B12, which has no whole plant food source at all.

  • Vitamin B12: is absent from whole plant foods entirely - the number above only reflects fortified ingredients (nutritional yeast, fortified soy milk). A reliable B12 supplement or fortified source is the standard recommendation for a fully plant-based diet, regardless of what any single day's total shows.
  • Omega-3 (EPA/DHA): most people fall short here regardless of diet - the typical omnivore diet doesn't include much oily fish either. This app only tracks ALA, the plant form (flax, walnuts, hemp, chia). The body converts some ALA to EPA and very little to DHA - the forms most directly used by the brain, eyes and heart - and that conversion is inefficient. An algae-oil supplement is the usual plant-based way to get EPA/DHA directly; it won't show up as an ingredient in any recipe here.
  • Vitamin D: deficiency is widespread across all diets, not just plant-based ones - it's mostly absent from whole plant foods here, and even the fortified soy milk and yogurt tracked don't cover the full target from food alone. Reasonable sun exposure or a D2/D3 supplement is the standard recommendation.

Not medical advice - if you're eating fully plant-based long-term, it's worth a conversation with a GP or dietitian, and a blood test is the reliable way to check where you actually stand.
