Method

17 min hands-on 1 hr 13 min altogether
  1. 1
Heat the oven to 180Β°C and line a baking tray with baking paper
    πŸ– 2 min
  2. 2
Finely zest Β½ orange, then squeeze its juice into a bowl. Mash Β½ very ripe banana until smooth, then beat in 30g peanut butter, 30g plain and unsweetened soy yogurt, 10g maple syrup and Β½ tsp vanilla extract with the orange zest and juice
    πŸ– 4 min
  3. 3
Mix 45g defatted soy flour, 50g oats, 8g cocoa powder, 6g ground flaxseed, 1 tsp baking powder, Β½ tsp cinnamon and 1 pinch salt in a second bowl, breaking up any small flour lumps
    πŸ– 2 min
  4. 4
Fold the wet mixture into the dry ingredients until no powdery patches remain. Leave the dough for 10 minutes so the soy flour, oats and flax hydrate; it should become thick enough to mound rather than pour
    πŸ– 2 minπŸ’€ 10 min unattended
  5. 5
Divide the dough into 3 generous mounds on the tray. With damp fingers, shape each into a thick 9-10cm round, then press 10g cacao nibs and 10g pumpkin seeds over the tops and around the edges
    πŸ– 4 min
  6. 6
Bake for 14-17 minutes, until the edges feel set and lightly crisp but the centres still yield slightly when pressed. Do not wait for the centres to become firm in the oven
    πŸ– 1 minπŸ’€ 16 min unattended
  7. 7
Leave the cookies on the tray for 10 minutes, then move them to a wire rack and cool completely.
    πŸ– 1 minπŸ’€ 30 min unattended
  8. 8
Serve at room temperature with the orange-flecked side and cacao-seed crown facing up, or pack only once completely cool
    πŸ– 1 min

Nutrients food alone won't reliably cover

These three are commonly under-consumed across all diets, not just plant-based ones - the difference is mainly B12, which has no whole plant food source at all.

  • Vitamin B12: is absent from whole plant foods entirely - the number above only reflects fortified ingredients (nutritional yeast, fortified soy milk). A reliable B12 supplement or fortified source is the standard recommendation for a fully plant-based diet, regardless of what any single day's total shows.
  • Omega-3 (EPA/DHA): most people fall short here regardless of diet - the typical omnivore diet doesn't include much oily fish either. This app only tracks ALA, the plant form (flax, walnuts, hemp, chia). The body converts some ALA to EPA and very little to DHA - the forms most directly used by the brain, eyes and heart - and that conversion is inefficient. An algae-oil supplement is the usual plant-based way to get EPA/DHA directly; it won't show up as an ingredient in any recipe here.
  • Vitamin D: deficiency is widespread across all diets, not just plant-based ones - it's mostly absent from whole plant foods here, and even the fortified soy milk and yogurt tracked don't cover the full target from food alone. Reasonable sun exposure or a D2/D3 supplement is the standard recommendation.

Not medical advice - if you're eating fully plant-based long-term, it's worth a conversation with a GP or dietitian, and a blood test is the reliable way to check where you actually stand.
