    Defrost 160g cooked quinoa overnight in the fridge if using frozen

    Steep 1 pinch saffron in 2 tablespoons of hot water for at least 5 minutes. Toast 15g roughly chopped pistachios and 10g pumpkin seeds in a dry pan for 2-3 minutes until fragrant, then cool completely and store separately so they stay crisp

    Blend 120g silken tofu with 60ml of 160ml unsweetened soy milk until completely smooth and glossy

    Warm quinoa, the remaining soy milk, saffron water, 10ml rosewater and 12ml maple syrup in a small pan. Simmer gently for 6-8 minutes, stirring often, until the grains are creamy and stained deep gold

    Fold in the blended silken tofu and 12g wheat germ, then cook for 1-2 minutes more until the porridge looks silky rather than wet. Take off the heat and let it cool for 5 minutes

    Peel, segment and chop Β½ orange. Mix orange, 42g pomegranate seeds, 12g barberries, 10ml grape molasses and 6ml lemon juice into a glossy jewel layer. Loosen 10g tahini with 1-2 teaspoons warm water until it can be drizzled

    Layer the saffron quinoa silk into a jar or glass with 95g plain, unsweetened soy yogurt and the jewel layer, keeping the toasted crunch separate. Cover and chill overnight or for at least 6 hours

Nutrients food alone won't reliably cover

These three are commonly under-consumed across all diets, not just plant-based ones - the difference is mainly B12, which has no whole plant food source at all.

  • Vitamin B12: is absent from whole plant foods entirely - the number above only reflects fortified ingredients (nutritional yeast, fortified soy milk). A reliable B12 supplement or fortified source is the standard recommendation for a fully plant-based diet, regardless of what any single day's total shows.
  • Omega-3 (EPA/DHA): most people fall short here regardless of diet - the typical omnivore diet doesn't include much oily fish either. This app only tracks ALA, the plant form (flax, walnuts, hemp, chia). The body converts some ALA to EPA and very little to DHA - the forms most directly used by the brain, eyes and heart - and that conversion is inefficient. An algae-oil supplement is the usual plant-based way to get EPA/DHA directly; it won't show up as an ingredient in any recipe here.
  • Vitamin D: deficiency is widespread across all diets, not just plant-based ones - it's mostly absent from whole plant foods here, and even the fortified soy milk and yogurt tracked don't cover the full target from food alone. Reasonable sun exposure or a D2/D3 supplement is the standard recommendation.
