    Whisk 140g teff flour, 70g wholemeal bread flour and 3g instant yeast with 420ml lukewarm water until completely smooth and about as fluid as single cream. Cover and leave in a warm place until lightly aerated, 45-60 minutes

    Whisk 1 tsp baking powder, 15ml lemon juice and Β½ tsp salt through the batter. Leave it for 5 minutes while a large non-stick frying pan heats over medium heat

    For each flatbread, pour a quarter of the batter into the dry pan and tilt it into a thin round. Cover and cook for 2-3 minutes without flipping, until bubbles have opened across the surface, the top is set and the underside releases easily.
