    Mix 630g wholemeal bread flour, 7g instant yeast and 2 tsp salt. Add about three quarters of 440ml lukewarm water with 16ml olive oil, mix, then add the remaining water gradually until no dry flour remains and the dough feels soft and slightly tacky

    Knead for 8-10 minutes until smoother and elastic. Return the dough to the bowl, cover and leave in a comfortably warm place for 45-60 minutes, until visibly risen and roughly doubled

    Set the oven to 190°C and choose the shape the meal needs. For a slicing loaf, form one taut log and place it seam-side down in a greased loaf tin. For rolls, divide into equal pieces and pull each into a tight round. For burger baps, flatten the rounds slightly. For a bánh mì-style sandwich, roll each portion into a slim 15-18cm baton with the seam underneath. Cover and prove for another 30-45 minutes, until puffy

    Score the loaf or batons. Bake rolls and baps for 18-22 minutes, batons for 20-24 minutes, or a full loaf for 30-35 minutes, until deep brown and hollow-sounding underneath
