    Put 155g plain flour and ΒΌ tsp salt in a wide bowl. Cut 75g very cold vegan butter into 1cm cubes, toss them through the flour, then flatten each cube once between your fingertips; keep plenty of distinct, flour-coated pieces rather than rubbing them in

    Stir 5ml lemon juice into 70ml ice-cold water. Add it gradually while tossing with a fork, stopping as soon as the mixture holds together when squeezed. Press the shaggy crumbs into a rough rectangle without kneading

    On a well-floured surface, roll the dough into a rectangle about three times as long as it is wide. Fold the top third down and the bottom third up like a letter, then turn the dough a quarter-turn. Roll, fold and turn three more times to make four folds in total.
